The raw eggs that are used are likely to carry a bacteria called salmonella. In order to eliminate the bacteria, the meal needs to be prepared at a temperature of at least 160 degrees. Unless you trust that your chef can pull off the intricate dish, it is better to choose a different kind of sauce for your meal.
